Happy Birthday to me, Happy Birthday to me, Happy Birthday on March 4th!!! My birthday cake…of course it’s my favorite colour: Red! Red Velvet Cake with an incredibly delicious frosting! (which will become my go to frosting): Cream Cheese, Mascarpone, & Heavy Whipping Cream, drizzled with a rich Belgium Dark Chocolate Ganache.

TJ’s (employee) “Iron Chef Challenge”

TJ’s (employee) “Iron Chef Challenge”

I am an employee of Trader Joe’s Upper Westside 72nd St. store in Manhattan. One of my most favorite activities at the store as an employee has to be the “Iron Chef Challenge”, a challenge item (sold) at the store is chosen secretly… then the challenge is on! I have entered several challenges since I began working at TJ’s, and have placed 1st twice, and 3rd once. Pictured is my challenge submission for this month (this past Friday), the challenge item is TJ’s “Cocoa Almond Spread”. In the spirit of Valentine’s Day, I created a Cocoa Almond Mousse with our Organic Frozen House Whip, and (chopped) Roasted/Salted Almonds; a Cocoa Almond cake (from scratch of course!) with a Raspberry Glaze made from TJ’s Raspberry Preserves, a little Cocoa Almond Spread & simple sugar (dissolved sugar & water). The Raspberries are filled with the Cocoa Almond Mousse. I placed 1st, along with another entry.

This Chocolate dessert creation is now a new entry to the “Luv Lots of Chocolate!” chocolate desserts collection!
